Although the foods of Fall are special, Italian cuisine holds a special place in my heart and cookbook. Whether you have seen it for yourself or only dreamed of going there one day, this delicious dish will transport you to the streets of Italy.

With kale as the centerpiece, this recipe provides a perfect combination of nutritious and delicious. This soup and all of its Tuscan flavors is perfect for a chilly fall night. Give it a try and bring a little piece of Italy to your kitchen! 

  • Drizzle dutch oven (or soup pot) with olive oil over medium heat.
  • Add garlic and onions, and cook until clear.
  • Remove sausage from casing and sauté in garlic and onions; do not remove fat.
  • Add beans and toss together.
  • Add kale, stirring occasionally. Cook until bright green.
  • Add stock and simmer until hot.
  • Finish with milk just before serving.
  • Salt and pepper to taste, add red pepper flakes if desired.
  • Serve with fresh parmesan and crusty bread.
