A Hearty, Rainy Day Meal: Stuffed Cabbage Soup

Looking for a meal that will leave you feeling full for the rest of the evening? One where you’ll slide your bowl across the table, push your chair back, and with a content sigh, say, “Whew, I’m stuffed!!”? If so, we’ve got just the meal for you: Stuffed Cabbage Soup!

It’s hearty. It’s perfect for a rainy day (like next Tuesday's weather prediction here in Bogart). And best of all, it’s simply delicious.


Heat the olive oil in a large pot over medium high heat. Add the ground beef and season with salt and pepper to taste. Brown beef for about 4 minutes. Then, add the onion and garlic, cooking for 2-3 minutes. Add the cabbage, carrots, beef broth, tomato sauce, rice, and bay leaf to the pot. Season with salt and pepper to taste.  Bring to a simmer and cook for 25 minutes or until rice is tender. Remove bay leaf and discard.
