Prick potatoes several times with fork and place in the microwave until soft, about 12 minutes. Flip the potatoes half way through. Let cool.
Combine tahini and olive oil in bowl. Set aside.
Cut potatoes and scoop out the middle into a food processor. Process potatoes, water, lemon juice, garlic, paprika, ¾ teaspoon salt, coriander, cumin, and chili powder until completely smooth. With processor still running, slowly add tahini mixture until mixed. Transfer to bowl and let sit for 30 minutes to let flavors meld together.
