No better way to say goodbye to the last days of Summer than with this roasted okra and tomato recipe. The main star of your farm box this week is okra. Okra reminds me of all the summer days spent canning with my mom. My mom loves to can every type of vegetable in the garden. I sometimes think how far removed we have come from the generations before us. Now living on a farm with my own family, I hope to pass down these traditions to my daughter. I believe in memories that aren't shared on social media but that are shared with loved ones.

  • Preheat the oven to 450.  Choose the roast setting if you have one.
  • Slice your okra and tomatoes.  Arrange on a cookie sheet, drizzle olive oil, and sprinkle with salt and pepper.  Toss it with your hands.
  • Roast the okra and tomatoes for about 10 minutes, then shake the pan to help the veggies rotate a bit for even charring and roast for another 5 minutes.
