I think that brussels sprouts look like tiny heads of cabbage, don't you agree? Did you know that they are packed with Vitamins C and K, fiber, and cancer fighting anti-oxidants and only pack 10 calories per sprout?! Now that is a power food. Still not sure about brussels sprouts...then I suggest you try them roasted with garlic. And, maybe top them off with some parmesan cheese and pine nuts. This sweet caramelized dish might be your new go to side.

  • Preheat oven to 425°.
  • Add brussels sprouts and onions to foil-lined baking pan.
  • In a small bowl, mix oil, garlic, salt and pepper; drizzle the mixture over sprouts and toss to coat.
  • Roast until tender, 20-25 minutes, stir occasionally.
  • Optional - top with parmesan cheese and/or nuts.
  • Garnish with rosemary.
