Fennel is loaded with beneficial fiber, making it a great choice for staying heart healthy. The appearance of fennel is a cross between an onion and celery, though the taste could not be any different. Having more sweet, light notes, fennel’s taste is related to a licorice or anise-like flavor. These flavors bring out the sweetness of other produce like apples.

In a small bowl, whisk together the lemon juice and zest, mustard, 1/2 tsp salt, and 1/4 tsp pepper. Slowly add the olive oil, whisking to emulsify.
Put the cabbage, apple, and fennel in a large serving bowl. Just before serving, gently toss the salad with the dressing. Season to taste with additional salt and pepper, sprinkle the pecans on top, and serve.
