Is there anything better than a hearty breakfast on a Saturday morning with friends and family around the table? This crowd pleaser is customizable with many options for toppings. Fuel up for a day full of fun with this veggie-packed breakfast skillet—or spice up your next brinner (breakfast for dinner) for an evening everyone will remember! Serve with fresh squeezed juice or mimosas.

  • Preheat oven to 375*
  • Dice potatoes and drizzle with olive oil, distribute on parchment-lined cookie sheet and bake for 30 minutes or until tender.
  • While potatoes bake, brown sausage in iron skillet.
  • Add diced onion and diced pepper, and cook until tender.
  • Add kale and cook until bright green.
  • Set oven to high broil.
  • Crack eggs directly into mixture. Allow to sit on top. Cook under broiler until whites become opaque.
  • Serve immediately!
